Living Life Gluten Free and Loving It!

In this blog I will be offering strategies for living gluten free as well as recipes for some of my favorite gluten free dishes that you can easily make at home. Today it will be chicken and rice with peas and chorizo!
This was one of my favorite dishes at my local Mom and Pop Mexican restaurants in Brooklyn. I recreated it as a gluten free and organic treat.

A few years ago I realized that having Hashimoto Thyroiditis CAN get worse! Suddenly I had allergies! I am not talking about the sniffles here by any means. I’m talking rashes, throat closure and anaphylactic reactions! I was allergic to everything! TOXINS in food, TOXINS in the enviroment. My body was unable to filter these toxins, instead toxins would build up causing horrible reactions.

 

I finally found a holistic doctor who had a handle on what was going on and he told me I was definitely allergic to gluten. Once I eliminated it from my diet I immediately noticed the difference and I have been gluten free ever since.

 

This is not a fad or an affectation, which so many people think going gluten free is in the real world. It is a big pain in the neck if you want to eat out in restaurant. Basically, I am afraid to eat outside food. Very few places offer gluten free alternatives especially if you don’t eat fish. It seems like every Italian restaurant has a lame serving of penne that you can add grilled chicken to but that gets really old after a while. Forget about eating out at other ethnic restaurants like Chinese, Thai, Brazilian or even your local diner. The danger of cross contamination is so great that it is just not worth it. So we have found our best alternative is cooking at home.

 

When we cook at home we only use organic, non-gmo, gluten free ingredients. I will be discussing how to shop, prepare gluten free, organic meals in future posts.

This was one of my favorite dishes at my local Mom and Pop Mexican restaurants in Brooklyn. I recreated it as a gluten free and organic treat.

 

You will need:

 

1 package of organic, free-range chicken tenders or three chicken breasts

1 large Chorizo

1 Vidalia onion

1 cup of sweet peas (in the photo we had substituted chopped peppers for peas)

1 cup of organic brown rice

3 cloves of organic garlic

Olive Oil

 

Dice the chicken into small segments. Dice the garlic and place it in a pan coated with olive oil under a low flame. Soften the garlic and then add the diced chicken. Sauté till fully cooked. Drain the liquid and then proceed to brown the chicken. Add a touch of white wine to debride the pan and let it simmer. After it has simmered remove from the pan and reserve. Dice up half of the chorizo and add to the pan with two tablespoons of oil as the sausage will throw off a lot of liquid. Slowly sauté until the sausage is fully cooked and throws off enough liquid to coat the chicken. Add the chicken and mix it around until everything is coated with the oil.

 

Clean and dice the onion. In a separate pan add olive oil and the diced onion. Slowly sauté until translucent. Add the peas and cook until soft. Finally add the rice that you had prepared separately.

 

Serve by adding the chicken and chorizo to the rice, peas and onions. Be sure to liberally add the sauce from the pan to give it a little kick.

 

This dish is one of my favorites. Delicious and gluten free. Enjoy.
